Fresh goat cheese flatbread with pumpkin seed pesto, shaved beef Philly cheesesteak, and a signature Bacardi rum snickerdoodle bar for dessert. These are some of the items on the menu at the FIU Bistro — a student-run restaurant at the Chaplin School of Hospitality & Tourism Management — now open for business.
The first summer semester lunch kicked off on Wednesday, June 8, with half the advanced food production management class pouring their love into cooking a three-course meal and the other half of the class, carefully serving it.
“Our students get hands-on experience in this class learning how to manage a food and beverage establishment. They work very hard to make our guests not only enjoy the meal and service but the entire experience,” said Cristina Moguel, FIU hospitality instructor.
The course is offered every semester. The students, with the help of professors John Noble Masi and Moguel, create the menu, which this semester includes a choice of one of three appetizers, a main course and a dessert. Vegan, vegetarian and gluten-free options are available. Lunch also comes with bottomless Mocktails, like the popular, passionfruit creamsicle.
The FIU Bistro is located at the Wine Spectator Restaurant Management Laboratory on FIU’s Biscayne Bay Campus in North Miami. The 3-course lunch is $10 and is open to students, faculty, staff and the public. Five more lunches are planned this semester.
